Cilantro lime chicken soup

If you don’t like cilantro then I guess you can leave it out but then it’s just lime chicken soup. 

What you need…

  • 1.5 cup chicken broth
  • 1 cup water
  • 1 minced garlic clove
  • 2 Tbsp chopped cilantro
  • 1 tbsp scallions (optional)
  • 1 poblano pepper chopped
  • 1/2 cup spinach chopped
  • 1 lime (just the juice) 
  • A dash of tajin seasoning or whatever kind of Mexican flavor you like 
  • 1 chicken breast (5oz cooked)

How to cook it…

  1.  Grill your chicken breast
  2. While that grilling… in a pot add everything but the cilantro 
  3. Bring to a boil and then summer until chicken is done grilling
  4. Add the cilantro and scallions 
  5. Cut the chicken into bite size pieces. (It should be about 5 oz)
  6. Then add the chicken to the pot. let simmer a few more min. 
  7. Transfer to a bowl and add 1 oz cheese. And 1.5 oz avocado diced up 

This is one complete Lean and Green, 3 condiments, 1 healthy fat 

Technically it’s 4 condiments I think but I didn’t count the lime juice as a condiment. So if you want to be by the book just take one of the seasonings out ☺️
