Fiesta Summer Salad

Summer is here that means lighter meals are a must when your going to be outside in the heat right?!

What you need… 

  • 7oz shrimp
  • 1/2 cup bell pepper
  • 1/2 cup cucumber
  • 1/2 cup sliced cherry tomatoes
  • 1 green onion
  • 1/2 jalapeño
  • 2 TBSP cilantro avocado yogurt dressing
  • 5-10 sliced black olives

How to make it…

  1. Boil your shrimp for about 3 min the. Place them in an ice bath. 
  2. Chop all you veggies up
  3. Now mix it all up with your dressing and chill
  4.  

You can have this whole thing! A complete lean and green and 2 healthy fats
