Chicken~N~Dumplings 

It’s so nice to have comfort food and not be overly stuffed!!! Thanks to Optavia I’m able to create such a thing!!! 

What you need…

  • 4oz of rotisserie chicken (I just picked one up at the store)
  • 1/2 cup almond milk
  • 1/2 cup mushrooms
  • 1/2 cup sliced celery
  • 1/2 cup green beans
  • 1/2 cup chicken broth
  • 1/2 cup water
  • 1/2 TBSP butter 
  • Spices : parsley, garlic powder, onion powder, sage 

How to make it… 

  1. Cook your green beans and your celery until tender 
  2. Blend your mushrooms and your almond milk together until it’s a good liquid then add it to your celery and green beans 
  3. Add on your chicken broth and spices. I didn’t measure them 😬 but probably a pinch of onion and garlic powder 1/4 tsp sage and 1/2 tsp of parsley. 
  4. Bring it to a boil and turn the heat down to a simmer. 
  5. While that’s cooking go ahead and pull all your chicken off the bones and make sure you pull the skin off too. 
  6. Now let’s get the dumplings ready!
  7. Mix your Optavia buttermilk and chedder buscuit with 1 TBSP egg beaters and 1 TBSP almond milk. Mix well and cook for 30sec. Then mix again and it should be all dough like 
  8. Once the liquid is thinkened or about half way gone add in your chicken 
  9. Add your dumplings in with a 1 tsp spoon and then add in your water and bring that to a boil. 
  10. Once it’s boiling turn down the heat some, cover and let simmer for about 15min. 


This is 2/3 of your lean all of your greens, 1 healthy fat, 1 fueling, 2 condiments 

* be sure to eat 2 more oz of protein sometime before the day is over ☺️

Cucumber and tomato salad 

What you need…

  • 3/4 cup chopped cucumber
  • 3/4 cup sliced cherry tomatoes or Roman tomatoes. 
  • A pinch of garlic and onion powder
  • A splash of Extra Virgin Olive Oil and balsamic Vinegar 
  • Or a splash of light Italian dressing 

How to make it…

  1. Put everything into a bowl and mix well 
  2. Refrigerate for 2hrs or over night 


This is 1 complete green and a bit of healthy fat 

Jalapeño Popper Burger 

I love anything with jalapeños!

What you need…

  • 2TBSP Light cream cheese
  • 1oz chopped up low sodium bacon
  • 2oz shredded chedder cheese
  • 1lb ground light meat turkey 
  • Salt and pepper 
  • 1-2 jalapeños chopped up 

How to make it…

  1. First off you just pour everything into a bowl
  2. Mix together
  3. Cook in a cast iron skillet (you don’t have to but it’s my favorite!)
  4. Once they are cooked you are good to go!!!
  5. Place in lettuce wraps or rev roll buns! 
  6. Don’t forget your healthy fat!!!!! I like to do a little avocado and a little ranch that equals 1 healthy fat ☺️

*what isn’t pictures but is amazing to eat with it is a little summer cucumber and tomato salad. 

* If you choose a rev roll bun you want a 4oz patty of you choose a lettuce wrap you want a 6oz patty. 

Indian Taco

Yes I went there! 

What you need…

  • 2 Rev roll
  • 4oz extra lean (90/10) beef or bison 
  • Sprinkle of cheese
  • 1TBSP sour cream
  • 1 cup lettuce 
  • 1/4 cup diced tomatoes
  • 1/4 cup salsa
  • Taco seasoning

How to make it…

  1. Cook your ground meat with some taco seasoning 
  2. Now place 2 rev rolls on a plate 
  3. Place your portion of meat and veggies on top


This is 1 complete lean and 1.5 of your greens, 1 healthy fat, and 2 condiments 

*you will need to add .5 cups more of greens. Maybe add more salsa or tomatoes ☺️
