Chicken Alfredo Boat

So yummy you won’t even know it’s heathy!

What you need

  • Chicken breast(you will only use 5oz)
  • 1oz mozzarella cheese
  • 1 bag parm cruncher snack or parm puffs (optional) 
  • Italian seasoning


  • 2 light garlic and herb Laughing Cow cheese wedges
  • 1/4 almond milk or chicken broth 
  • 2TBSP reduced fat parm cheese

How to make it…

  1. Pound you chicken until it’s 1/2 in thick then place in a hot skillet and sprinkle with Italian seasoning (till do the same when you flip it)
  2. While that is cooking poke holes in the spaghetti squash and heat I tithe microwave about 4 min flop in over and cook an other 5 min
  3. When it’s done be careful and remove it from the microwave let it cool some the cut it in half long ways 
  4. The scrap it clean for the seeds 
  5. Get a fork and start racking the squash apart. Place 1.5 cup in a bowl and set aside the left over for an other day. 
  6. Now cook the sauce place all your sauce ingredients in the  bowl with your squash. Place in the mirowave for 1 min stirring half way through 
  7. Your chicken should be done now 
  8. Now cut your chicken into bite size pieces and only use 5oz 
  9. Place your squash and sauce back in the squash boat the place your chicken 
  10. No crush up your crushers or parm puffs.(I used half the bag on each spaghetti boat)
  11. Top with mozzarella, crunchers and a dash of parm cheese
  12. Now place in the oven at 400° until it’s all bubbly 

This is a complete lean and green, 1 healthy fat, 1.25 condiments per boat ☺️
